Roasting changes the chemistry of coffee beans, so an extract made from green beans keeps more of the chlorogenic acid that is otherwise lost in the roaster. Green coffee is often compared with green tea, as both are plant extracts rich in polyphenols. Green coffee beans naturally contain some caffeine, so take care if you are sensitive to it, and avoid it during pregnancy or breastfeeding. Swallow the capsules with water.
